MYSTIQUE CIDER
Mystique sparkling cider is the fruit of a beautiful assemblage of McIntosh, Cortland, Empire, and Spartan apples. Picked at full ripeness, the apples are gently crushed and pressed using a band press. The resulting apple must is fermented at low temperature to preserve its full aroma. Finally, a second fermentation in a fermenting tank gives it the natural effervescence that is unique to this type of sparkling cider.
